Based on the techniques of Edomae, we carefully select the best seafood for each season. By using methods such as simmered soy sauce, vinegared fish, and kelp-wrapped preparations, we enhance the umami and prioritize harmony with the delicate rice. In our omakase, we provide the most delicious piece of sushi of the day as we transition from appetizers to nigiri. We can also provide a simple explanation in English, so international guests can enjoy with peace of mind. Please enjoy a memorable time along with the charm of Kyoto.
A refined counter with the scent of white wood.
Upon opening the door, you enter a calm space with a smoothly extending white wood counter. To ensure you can relax without any tension, the actions and proceedings are quiet, and conversations are conducted with care. The seating is centered around the counter, and the entire establishment is non-smoking. Nearby, there are tourist spots such as Honnoji Temple and the Kyoto International Manga Museum, making it a convenient location for lunch or dinner during your sightseeing. There are 18 seats, and we accept various credit cards. Please enjoy the sushi experience, which includes the aroma, sound, and spacing, in a comfortable atmosphere.
From Ebisu to Goshonishi, Inheriting Edomae.
We have moved our base from Ebisu, Tokyo, where we cultivated Edomae craftsmanship, to Goshonishi, Kyoto. While preserving the traditions of Edomae, we gently incorporate Kyoto's food culture and seasonal sensibilities, facing our daily procurement and preparation. Even though the location has changed, the core remains unchanged. With the intuition honed over years of making sushi and the flexibility learned from the local sensibilities—through these two wheels, we aim to create sushi that makes both travelers and locals want to 'come back again.'
